Tamm’s Jam Grilled Cheese
Serves 4
Ingredients
- 8 slices sourdough bread
- 2 medium ripe tomatoes
- 3 Tbsp Raspberry Dark Balsamic
- Butter Olive Oil, for brushing the bread
- 8–12 slices mild provolone or mozzarella
- 1 ripe avocado, thinly sliced
- Salt and freshly ground black pepper, to taste
- Optional: cooked bacon or thinly sliced prosciutto
Directions
1. Make Tamm’s Jam
Remove the seeds from the tomatoes and finely dice. Toss the diced tomatoes with 3 tablespoons Raspberry Dark Balsamic and a small pinch of salt. Cover and refrigerate for 3 hours.
2. Drain the tomatoes
Before assembling the sandwiches, drain off the excess balsamic from the tomatoes. You want them juicy and flavorful, but not so wet that they make the sourdough soggy.
3. Assemble
Brush the outside of each slice of sourdough with Butter Olive Oil.
Layer each sandwich with:
cheese → raspberry-balsamic tomatoes → sliced avocado → optional bacon or prosciutto → another layer of cheese.
Top with the second slice of sourdough.
4. Grill
Heat a skillet or griddle over medium-low heat. Grill for about 3–4 minutes per side, until the sourdough is crisp and golden and the cheese is melted.
5. Serve
Slice in half and serve warm.
Tamm’s Tip
Add bacon or prosciutto for a little salty bite to balance the sweet Raspberry Balsamic, creamy avocado and melted cheese.
