Juicy garden tomatoes, creamy mozzarella, fresh basil, and toasted baguette are brought together with Basil Olive Oil and Oregano White Balsamic for a simple dish that's perfect for entertaining, cookouts, or enjoying on the patio.

Ingredients

  • 1 French baguette, sliced into ½-inch pieces
  • 3 tbsp Basil Olive Oil, divided
  • 3 cups ripe tomatoes, diced (Roma or garden tomatoes)
  • 8 oz fresh mozzarella pearls (or diced fresh mozzarella)
  • ¼ cup fresh basil, thinly sliced
  • 2 tbsp Oregano White Balsamic
  • 1 garlic clove, peeled
  • ½ tsp kosher salt
  • ¼ tsp freshly cracked black pepper

Directions

  1. Preheat a grill or oven to 400°F.
  2. Brush both sides of the baguette slices with 2 tablespoons Basil Olive Oil.
  3. Grill or toast for 2–3 minutes per side until golden and crisp.
  4. While the bread is toasting, combine the diced tomatoes, mozzarella, basil, remaining 1 tablespoon Basil Olive Oil, Oregano White Balsamic, salt, and pepper in a large bowl. Toss gently.
  5. Lightly rub each warm slice of toasted bread with the peeled garlic clove.
  6. Arrange the toasted baguette on a serving board and spoon the tomato mixture over each slice just before serving.
