Roasted Sweet Potatoes & Onions

Ingredients:

  • 2 large sweet potatoes, peeled and cubed
  • 1 large red onion, sliced
  • 2 tablespoons Olivetta's Butter infused olive oil
  • 1 tablespoon Olivetta's Black Mission Fig balsamic vinegar
  • 1 teaspoon fresh thyme leaves (or ½ tsp dried thyme)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potatoes and red onion slices with the Butter infused olive oil, coating evenly.
  3. Spread the vegetables on a baking sheet in a single layer. Sprinkle with thyme, salt, and pepper.
  4. Roast for about 25–30 minutes, stirring halfway, until the sweet potatoes are tender and lightly caramelized.
  5. After roasting, drizzle the Black Mission Fig balsamic over the vegetables and gently toss. Serve warm.
