Roasted Sweet Potatoes & Onions
Ingredients:
- 2 large sweet potatoes, peeled and cubed
- 1 large red onion, sliced
- 2 tablespoons Olivetta's Butter infused olive oil
- 1 tablespoon Olivetta's Black Mission Fig balsamic vinegar
- 1 teaspoon fresh thyme leaves (or ½ tsp dried thyme)
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sweet potatoes and red onion slices with the Butter infused olive oil, coating evenly.
- Spread the vegetables on a baking sheet in a single layer. Sprinkle with thyme, salt, and pepper.
- Roast for about 25–30 minutes, stirring halfway, until the sweet potatoes are tender and lightly caramelized.
- After roasting, drizzle the Black Mission Fig balsamic over the vegetables and gently toss. Serve warm.
