Mediterranean Grilled Chicken & Vegetable Skewers

These Mediterranean-inspired skewers are packed with savory garlic, herbaceous oregano, and colorful vegetables. They're easy to prepare, perfect for the grill, and bring fresh summer flavor to any backyard gathering.

Ingredients

  • 1½ lbs boneless chicken thighs, cut into 1½-inch pieces
  • 1 red bell pepper, cut into chunks
  • 1 zucchini, sliced into thick rounds
  • 1 red onion, cut into chunks
  • 3 tbsp Garlic Olive Oil
  • 3 tbsp Oregano White Balsamic
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • Wooden or metal skewers

Directions

  1. In a large bowl, whisk together Garlic Olive Oil, Oregano White Balsamic, salt, and pepper.
  2. Add the chicken and toss well to coat. Cover and marinate for 30 minutes to 2 hours.
  3. Thread chicken, bell pepper, zucchini, and onion onto skewers, alternating ingredients.
  4. Preheat grill to medium-high heat.
  5. Grill skewers for 10–12 minutes, turning every few minutes, until the chicken reaches 165°F and vegetables are lightly charred.
  6. Transfer to a serving platter and drizzle with 1 additional tablespoon of Oregano White Balsamic just before serving.
