Mediterranean Grilled Chicken & Vegetable Skewers
These Mediterranean-inspired skewers are packed with savory garlic, herbaceous oregano, and colorful vegetables. They're easy to prepare, perfect for the grill, and bring fresh summer flavor to any backyard gathering.

Ingredients
- 1½ lbs boneless chicken thighs, cut into 1½-inch pieces
- 1 red bell pepper, cut into chunks
- 1 zucchini, sliced into thick rounds
- 1 red onion, cut into chunks
- 3 tbsp Garlic Olive Oil
- 3 tbsp Oregano White Balsamic
- 1 tsp kosher salt
- ½ tsp black pepper
- Wooden or metal skewers
Directions
- In a large bowl, whisk together Garlic Olive Oil, Oregano White Balsamic, salt, and pepper.
- Add the chicken and toss well to coat. Cover and marinate for 30 minutes to 2 hours.
- Thread chicken, bell pepper, zucchini, and onion onto skewers, alternating ingredients.
- Preheat grill to medium-high heat.
- Grill skewers for 10–12 minutes, turning every few minutes, until the chicken reaches 165°F and vegetables are lightly charred.
- Transfer to a serving platter and drizzle with 1 additional tablespoon of Oregano White Balsamic just before serving.
