Ingredients

  • 3 large ripe tomatoes, cut into wedges
  • 1 English cucumber, sliced into half moons
  • 2 ears fresh sweet corn, cooked and kernels removed (or 1½ cups sweet corn kernels)
  • ¼ small red onion, thinly sliced
  • ¼ cup fresh dill, roughly chopped
  • 1 avocado, sliced (optional)
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste

For the Dressing

  • 3 tbsp Dill Infused Olive Oil
  • 2 tbsp Suyo Cucumber White Balsamic
  • ½ tsp flaky sea salt
  • ¼ tsp freshly cracked black pepper

Directions

  1. In a small bowl, whisk together the Dill Infused Olive Oil, Suyo Cucumber White Balsamic, salt, and pepper.
  2. In a large serving bowl, combine the tomatoes, cucumber, sweet corn, red onion, and fresh dill.
  3. If using avocado, gently fold it into the salad just before serving.
  4. Drizzle with the dressing and toss lightly to coat.
  5. Finish with an extra sprinkle of flaky sea salt and freshly cracked black pepper before serving.
