Dark Chocolate Balsamic Roasted Strawberries with Mascarpone Velvet
Ingredients – Roasted Strawberries
- 1 pound fresh strawberries, hulled and halved
- 2 tablespoons Dark Chocolate Balsamic Vinegar
- 1 tablespoon honey or maple syrup
- ½ teaspoon vanilla extract
- Pinch of sea salt
Ingredients – Mascarpone Cream
- ½ cup mascarpone cheese, room temperature
- ¼ cup heavy whipping cream
- 1 tablespoon powdered sugar
- ½ teaspoon vanilla extract
Directions
Roast the Strawberries
- Preheat the oven to 375°F.
- In a mixing bowl, toss the strawberries with the Dark Chocolate Balsamic, honey, vanilla, and sea salt.
- Spread the strawberries in a single layer on a parchment-lined baking sheet.
- Roast for 15 minutes, stirring once halfway through, until softened and syrupy.
Make the Mascarpone Cream
- In a bowl, whisk together the mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy.
- Chill until ready to serve.
To Serve
- Spoon the roasted strawberries (with their syrup) into serving bowls.
- Top with a generous dollop of mascarpone cream.
- Garnish with shaved chocolate, mint, or crushed nuts if desired.
