Dark Chocolate Balsamic Roasted Strawberries with Mascarpone Velvet

Ingredients – Roasted Strawberries

  • 1 pound fresh strawberries, hulled and halved
  • 2 tablespoons Dark Chocolate Balsamic Vinegar
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • Pinch of sea salt

Ingredients – Mascarpone Cream

  • ½ cup mascarpone cheese, room temperature
  • ¼ cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • ½ teaspoon vanilla extract

Directions

Roast the Strawberries

  1. Preheat the oven to 375°F.
  2. In a mixing bowl, toss the strawberries with the Dark Chocolate Balsamic, honey, vanilla, and sea salt.
  3. Spread the strawberries in a single layer on a parchment-lined baking sheet.
  4. Roast for 15 minutes, stirring once halfway through, until softened and syrupy.

Make the Mascarpone Cream

  1. In a bowl, whisk together the mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy.
  2. Chill until ready to serve.

To Serve

  • Spoon the roasted strawberries (with their syrup) into serving bowls.
  • Top with a generous dollop of mascarpone cream.
  • Garnish with shaved chocolate, mint, or crushed nuts if desired.

Serving Ideas:

  • Delicious over pound cake, waffles, or ice cream.
