Aunt Tina’s Sicilian Roasted Peppers

Ingredients:
  • • 2–3 peppers (green & red)
  • • 2 Tbsp sugar (optional — not needed if you’re using our aged balsamic)
  • • 2–3 cloves crushed garlic
  • • 2 tsp basil (fresh or dried)
  • • 2 Tbsp Olivetta’s EVOO
  • • 3 Tbsp Olivetta’s Traditional 18-Year Aged Balsamic (to taste)
Directions:
Roast peppers on the stove or in the oven until the skins are charred. Place them in a brown paper bag, close it, and let them steam for a few minutes. Peel, rinse under cold water, and slice into strips.
Toss peppers with garlic, basil, EVOO, and balsamic. Serve with Italian or French bread — and if you want to make it extra special, add a slice of Asiago on top.
